LINDA'S ENCHILADAS

Serves 2.

Optional ingredients - use as many as you want:

Preheat oven to 250 degrees .

Either poach or grill salmon.

Pour a little oil and a layer of sauce in the bottom of a baking pan. Add a layer of tortillas, overlapping a bit. Layer with cheese and optional ingredients. Pour more sauce over. Add another layer of tortillas. Layer more cheese and optional ingredients. Cover with foil.

Bake slowly at 250 degrees for about 30 minutes. Remove foil and bake til crispy at 350-375 degrees.

Serve with sour cream and avocado.
