GINGERBREAD PANCAKES
Makes about 10 (4 inch) pancakes.
- 1 cup all-purpose flour
- 1/4 cup yellow cornmeal
- 2 Tbsp sugar
- 1/2 teaspoon ground cinnamon
- 3/4 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 1/2 teaspoons salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 Tbsp vegetable oil
- 1/4 cup molasses
- 1 cup buttermilk or milk
- 1 large egg, lightly beaten
- chopped crystallized ginger (optional) for topping
Sift together dry ingredients. In a separate bowl, mix together wet ingredients. Add liquids to
dry ingredients all at once, stirring until just combined.
Make into pancackes
