PEANUT BUTTER BLOSSOMS

Makes 3 dozen cookies

Preheat oven to 375°

Sift together:

• 1-3/4 cups flour
• 1 tsp baking soda
• 1/2 tsp salt

Cream:

• 1/2 cup butter
• 1/2 cup peanut butter
• 1/2 cup sugar
• 1/2 cup brown sugar

Add:

• 1 egg
• 1 tsp vanilla

Blend in dry ingredients gradually. Shape dough into balls using rounded teaspoon full for each. Roll balls in sugar and place on ungreased cookie sheets. Bake at 375° for 8 minutes. Remove sheet from oven and place a solid "kiss" on top of each cookie, pressing down firmly so that cookie cracks around the edge. Return cookies to oven and bake 2-5 minutes longer until golden brown.
