PRALINE SWEET POTATOES
- 2/3 c. brown sugar, packed
- 1/2 c. chopped pecans
- 1/2 c. melted butter
- 1/2 tsp. cinnamon
- 4 c. cooked sliced sweet potatoes, canned may be used
- 1/3 c. orange juice
- 2/3 tsp. brandy
- 1 tsp. salt
- Dash of pepper
- 1/8 - 1 tsp. orange peel or 1/4 tsp. orange or lemon extract
- 1/2 tsp. ginger
- 1/4 tsp. allspice
Combine 1/3 cup brown sugar, pecans and 1/4 cup melted butter and cinnamon; mix and set aside for
topping.
Combine sweet potatoes, 1/4 cup melted butter, 1/3 cup brown sugar, orange juice, brandy, salt and
spices; mix well. Put in a shallow, buttered baking dish (I use a 13"x9"x2"). Spread nut mixture
on top.
Bake at 350 degrees for 30 minutes.
